Light and contemporary restaurant where your snacks can be eaten in-room or in the lounge or indeed on the move. Ingredients are sourced from the local market. Clean lines, natural items and a rustic yet refined atmosphere are the modern elements on offer. Options include Pastries, fresh fruits, cereals, soups, salads, cakes, juices, teas and coffees.

Fiamma Restaurant: 322 seats. Fresh contemporary colours are the setting for this restaurant serving international cuisine with a Mediterranean flavour and theatre cooking. The menu options include fresh fish, pizzas, pastas and grills, freshly made salads and desserts.

The EDG Lounge and Bar: Located on the ground floor and has a capacity for 50. Here you can relax in the spacious leather sofa seats and cosy chairs. Drinks include a large range of wines and cocktails. Makes an ideal meeting place for friends or colleagues with coffee served in the mornings, snacks at lunchtime and tea served in the afternoon.
The bar (30 foot long) is open to the general public as well as to Metropole hotel guests but is guests only from 23.00 till 02.00. Also serves light meals and snacks. Opens at 10.00. WiFi available here.
Whisky Lounge: Sophisticated and relaxing atmosphere and serving over 70 whiskies from around the world including exclusive and rare labels. Drinks can be enjoyed along with savoury or sweet light bites. The bar has been themed along the lines of a private members club and furnished with old whisky decanter light fittings, display cabinets, and grey club chairs with hints of dark cyan and teal.

In 2013 became the first hotel in the UK Hilton chain to receive an upgrade to the new style lobby. The Hilton aim is for smartly designed and functionally relevant lobby spaces, for guests and locals to work, socialise and enjoy. The revamp cost £6 million pounds. Completed in two phases and designed by Aukett Fitzroy Robinson. The first phase included a new lobby bar and Whisky Lounge with a 20 foot bar. Phases two included two double-height entrance glass doors and an increase in room capacity by 4.with 354 of the largest Double-Double rooms in London at that time.

At the end of November 2006 the hotel was sold to the Tonstate real estate Group for £417 million. The deal also included the Birmingham Metropole. The hotel retains its Hilton branding and management while Tonstate take over the work of renovations.
